They actually do try to keep the cockpit cool. The mech is covered with heatsinks in various places, including the cockpit. She's also wearing a coolant vest that's connected to the mech's cooling systems that pumps chilled coolant through a.meshwork of tubes resting directly against her body. The cockpit is also relatively cool right now, but there's a multi-ton fusion reactor a few meters under that seat, and when it spins up to full power, it puts out an absolute shitload of heat that just having AC in the cockpit to cool it just won't cut it. That heat only gets worse when she starts firing weapons--at peak, you could pretty much bake cookies in there. Under the right conditions, the heatsinks can move a lot of heat out of that space very quickly, but without that cooling vest and maybe a respirator to provide cooler air, there's a good chance the heat would be enough to cook her to death before the heatsinks could get the cockpit cool again.
Tl;dr: She's got a better cooling system than a plain jane air conditioner in there, but it's still going to struggle to keep that space survivable no matter what you try to do because she's basically riding a portable star. With a butt-ton of giant cannons.in various flavors.
